crazy ginger chicken

Ginger chicken -this is my all time fav chicken dish.when i was back in india ,this was my must order along with other dishes.i never got bored of it.but after coming to US,i crave for this as i cant find this in usual indian restaurants.i have to go 30 miles for ths indo-chinese restaurant which is the only place around which have this crazy ginger chicken.so i thought why not try this at home to save my gas all the way for 30 miles.haha.And iam happy that i tried this.





Ingredients:

1.Boneless chicken thigh pieces -1kg,washed and cut into small pieces
2.ginger-garlic paste-2tsp
3.ginger julienne-2tsp
4.salt
5.turmeric-1/2 tsp
6.soya sauce-3tbsp
7.corn flour-5tbsp
8.yogurt-1/2 cup
9.onions-1 larger thinly sliced
10.tomato-1 medium
11.green chillies-4
12.mint leaves-2 sprigs
13.coriander  powder-2 tsp
14.cumin powder-1 tsp
15.red chilli powder-1/2 tsp
16. garam masala-1/2 tsp
17.tomato ketchup-3 tsp
18.chilli sauce-2 tsp
19.spring onions-for garnish
20.oil-1/3 cup


Method:

1.Take chicken pieces into a bowl,add salt,ginger-garlic paste,soya sauce and corn flour.mix well and let it marinate for 20 mins.
2.Meanwhile make a smooth paste of onions,mint leaves,tomato and green chillies
3.In a wide pan heat oil and add the chicken pieces and saute well until it  get brown for 5mins.



4.Add the spices,yogurt and saute for 5 mins,add the onion paste and mix well n let it cook uncovered for 10 mins on med-high,stirring occasioanally.



5.When the mixture leaves oil put it on slow flame,add the ginger julienne and cover it for another 10 mins.
6.Lastly to finish it off you can add ketchup and chilli sauce.(i usually take my kids portion off then add chilli sauce)


7.Garnish with spring onions.

8.Serve hot .




Our dinner yesterday : ginger chicken,toorai-moong daal curry and paratha.
