Paya curry

Paya means legs.it is made with goat or beef leg bones and meat cubes.great during those winter days or when u have cold.goes well with naan.it you havent tried it before,definately give a try ,you would love it.one of my friend  never tasted it and now she loves it.its an easy,no watch recipe.just leave it on the stove and carry on with your chores.



Ingredients:

goat/cow bones,hooves-4-6 large pieces
large meat cubes-1/2 pound
ginger-garlic paste-1tbsp
salt
turmeric-1/2 tsp
butter/ghee-1/2 cup
bay leaves-2
aniseed-1
cloves-4
cardamom-3
cumin seeds-1tsp
nutmeg-a pinch(optional)
onion-1 medium
red chilli-1 tsp
coriander powder-2tsp
cumin owder-1 tsp
pepper powder-1/2 tsp
garam masala-1/2 tsp
coconut milk-3tsp
yogurt-1cup

Method :

1.Wash the hooves and meat cubes properly.
2.Add salt,turmeric,ginger-garlic paste in a cooker.
3.Add 5-6 cups of water and make sure the bones are well covered in water.
4.Cook in slow heat until hooves are tender(2-3 hrs)
5.Heat ghee in a pan and add whole spices, add onions and fry until golden brown.
6.Add yogurt,coconut milk and fry for a min.
7.Add all the spices and fry for 5 mins in slow heat till the mixture oozes ghee,
8.Finally add into the hooves mixture and bring to boil on high heat.adjust gravy accordingly and leave it on slow heat for another 15-30 mins.
pour in wide bowl,garnish with fried onions,ginger juliene and lemon wedges
serve hot with naan.

you can always make it in hurry but slow cooking gives the gravy a great taste.

Easy chicken fry

This is an easy chicken recipe i learnt from my aunt and she always get praised on it and now i get praises whenever i make it.believe me you will love it.
 
Ingredients:
chicken - 1 kg (big pieces)
ginger garlic paste - 3 tsp
onions - 2 big
tomatoes - 2
yogurt-1cup
coconut milk-1/3 cup
lemon - 1
green chillies - 6
garam masala - 1 tsp
coriander powder - 2 tsp
cumin powder - 1 tsp
chicken tikka masala - 3 tsp
red chilli powder - 1 tsp
tomato ketchup-3tsp
soya sauce-3tsp
pepper powder - 1 tsp
oil - 5 tbsp
salt as per taste

Method
  1. Wash chicken and keep aside.
  2. Grind coarsely onions, tomatoes and green chillies.
  3. In a bowl add ginger garlic,garam masala ,lemon ,yogurt and coconut milk and all other spices
  4. Then add the grinded sauce and mix well.
  5. Let it marinate for minimum of 30 mins.
  6. Heat a  wide pan. Add the marinated content in it and let it cook for 30 mins on medium heat (no water required) till the chicken is well cooked and water of curry dries up.
  7. Separate the chicken pieces from the gravy in the pan.
  8. Heat oil in another pan. Take out just the chicken pieces without gravy and fry till golden brown.
  9. Don't over fry (5 mins or so is enough).
  10. Take out the chicken from oil, lastly fry the gravy in the same oil for 5 mins.
  11. Add tomaoto ketchup,soya sauce and pepper powder. Now add the fried chicken pieces into it n mix well. cover with lid in slow heat for 5 mins.
  12. Serve hot.
