Paya curry

Paya means legs.it is made with goat or beef leg bones and meat cubes.great during those winter days or when u have cold.goes well with naan.it you havent tried it before,definately give a try ,you would love it.one of my friend  never tasted it and now she loves it.its an easy,no watch recipe.just leave it on the stove and carry on with your chores.



Ingredients:

goat/cow bones,hooves-4-6 large pieces
large meat cubes-1/2 pound
ginger-garlic paste-1tbsp
salt
turmeric-1/2 tsp
butter/ghee-1/2 cup
bay leaves-2
aniseed-1
cloves-4
cardamom-3
cumin seeds-1tsp
nutmeg-a pinch(optional)
onion-1 medium
red chilli-1 tsp
coriander powder-2tsp
cumin owder-1 tsp
pepper powder-1/2 tsp
garam masala-1/2 tsp
coconut milk-3tsp
yogurt-1cup

Method :

1.Wash the hooves and meat cubes properly.
2.Add salt,turmeric,ginger-garlic paste in a cooker.
3.Add 5-6 cups of water and make sure the bones are well covered in water.
4.Cook in slow heat until hooves are tender(2-3 hrs)
5.Heat ghee in a pan and add whole spices, add onions and fry until golden brown.
6.Add yogurt,coconut milk and fry for a min.
7.Add all the spices and fry for 5 mins in slow heat till the mixture oozes ghee,
8.Finally add into the hooves mixture and bring to boil on high heat.adjust gravy accordingly and leave it on slow heat for another 15-30 mins.
pour in wide bowl,garnish with fried onions,ginger juliene and lemon wedges
serve hot with naan.

you can always make it in hurry but slow cooking gives the gravy a great taste.
