Egg-arvi (taro) curry

Yesterday i made this egg-arvi curvy for our dinner.it is very easy and quick recipe when you dont have much time to cook but you want some homemade food.its such a relaxing curry especially in summers.goes well with plain rice.usually we boil arvi before making a curry but once my dear hubby suggested me too cook it without boiling it and the result was good.it cooks fast like potato and is not that gooey as compared to the boiled one.peeling is little painfull if you have very small taros,so try picking medium size taros.



Ingredients:

1Boiled eggs-5
2.Arvi-8-10 medium ones peeled and cut into small pieces
For tempering:
      mustard seeds-1/2 tsp
      cumin seeds-1 tsp
      red chillies-2
      fenugreek seeds-1/4 tsp
      curry leaves-2 sprigs
Onions-1 large thinely sliced
Ginger-garlic paste-2tsp
Tomato -2 medium
Tamarind juice-1 cup,(lemon size soaked in hot water and squezeed)
Salt
Turmeric-1/2 tsp
Red chilli powder-1/2 tsp
Green chillies-2
Coriander powder-2 tsp
Cumin powder-1 tsp
Coconut milk-2 tbsp
Curry powder-1 tsp

Method:
1.Heat the oil in a pan and add the tempering,add onions,fry till brown.

2.add ginger-garlic paste,green chillies,fry for 5mins then add tomato and fry for another 5 mins.
3.add the coconut milk and all the spices and fry on slow flame until the mixture leaves oil.
4.Add the cut arvi pieces and mix well.add little water (1/2 cup)as it will stick in the bottom,fry for 5 mins on medium heat stirring in between.

5.add the tamarind juice,2cups water,mix well and let it come to a boil.

6.put cut marks on bolied eggs and slide them in the boiling gravy.


7.Simmer it for another 10mins.check the arvi with a knife.it should be soft by now.

8.serve with hot plain rice with some chips.
