Mughlai chicken

The Mughals were known to be food lovers.Mughal cuisine is a vast palate of biryanis,kebabs,tandooris and naans.Mughlai food is known for its richness.The exotic use of spices,dried fruits and nuts give the mughlai food the silky texture which makes every dish melt in your mouth.

here is a simple chicken recipe which will make you eat a roti or naan extra than usual.i bet...!!!usually i love the redness in my curries but this mughlai chicken lacks that as it is made with more green chillies and less red chilli powder.



Ingredients:

chicken -1 kg cut into medium sie pieces
ginger garlic paste-2tsp
green chillies-6-8
salt to taste
onions-2 medium thinly sliced
turmeric-1/2 tsp
red chilli powder-1tsp
coriander powder-2tsp
cumin powder-1 tsp
garam masala-1/4 tsp
cashew nuts-8-10 dry saute in pan or microwave and  make a paste with 1/4th cup milk.
coconut milk-1/4th cup
curd-1/2 cup
ghee-3tbsp

Method:

take chicken in a bowl,add 1tsp ginger garlic paste,green chillies,salt,turmeric,chilli powder,coriander powder,cumin powder,coconut milk,curd,half of the sliced onion and marinate for 20 mins.

heat oil in a pan,add the other half of onions,saute well till onions get brown,add 1 tsp ginger garlic paste,fry for 1 min.
add the marinated chicken,mix well,fry on high for 5 mins.


add the cashew-milk paste and mix well.fry for another 5 mins
Add 1/2 cup water and cover it with lid for another 15 mins.



uncover and mix the chicken well and cover it again for 5-10 mins till the chicken is tender.


creamy  mughlai chicken is ready
serve with naan or paratha.
